best wood for 3d engraving?

There are many hardwoods the work well. Maple, Cherry, Walnut at one end to the exotic Paduk, Purpleheart, Bloodwood, Pecan, and many more.
The ones to avoid are the very stringy grain (red oak is the worst), extremely flammable (zebrawood), and strongly patterned grain like Canary wood. I have had good results with poplar but also bad results depending on the piece. I did carve a lion out of Zebrawood once just for the irony, but it was very tricky.
