My FIL purchased his first Kamado grill way back in the 70s. I’m told it came directly from Japan. Of course, now The Big Green Egg is the popular choice and I believe he purchased his first BGE in the 80s. We have 2 large ones and my husband probably grills on them about twice a week. In his prior life, his father also created a meat seasoning that is now sold around the southeast. It is soooo good, on everything, but especially steak.

Dales is pretty common around here (SouthEast) but I’ve never bought it - not that I dislike it, just prefer a different type. I’m originally from the UK, so you can probably guess! :rofl: :united_kingdom:

Dale’s came out of the Cellar, it was their house marinade that people starting asking for, so they put it in soda bottles. First bottled in B’ham, 1946..

I am working on designing a larger smoker with inserts depending on what I’m going to smoke.

the goal is to hold 4 whole turkeys, or a whole lotta ribs, or a couple of briskets.

the brinkman smoke n pit professional I got from Service Merchandise is about dead. I welded new steel on the bottom to keep it going a couple years ago.

If you’ve had it since Service was still around, you’ve probably got plenty of experience. Mine is there’s a place for large smokers, but also for small. I’ve had as many as 4 at one time. I lived with just one, a 20ā€, for the past decade or so, and that was big enough for virtually anything I needed, but small (and super efficient) for small stuff as well. It was composite, not traditional.

Dale’s is pretty tasty, but my local favorite marinade is Pilleteri’s, born out of Mr. P’s Butcher Shop in Birmingham (Hoover, actually :wink:)

Fifty years.. I love it when the little place manages to hang in there. We’ve lost so many around here, priced out of existence by lease rates that have exploded. It’s just awful how many of the same old mediocre (at best) chains keep expanding. I rarely eat out any more.

I did last night, though. The only place I’ll go for a burger, and it’s been a year or more. Moxie Burger, local small chain. This is the original location where I met the owner - fellow Boxer lover. Dixie approves..

Ya I have been smoking meat for a very long time. best book I’ve found was Adam Perry Lang’s Serious BBQ.

I have an electric smoker for when I want to do it the easy way. Not a pellet just electric heat. I have found that i cannot produce enough smoke to suit me. the custom built one is going to allow for noninsane amounts of meat. :slight_smile:

I cannot imagine juggling 4 at a time. you are a wild man. :slight_smile:

hehe.. no, I owned 4 but never used more than two at a time! (The electric was super handy for certain things, like smoking fish, so if I was going to be messing with another, I’d often plan ahead and use that one too..)

.. which just made me realize, perhaps another smoker WILL be in my future again. Apartments may not allow ā€œfireā€ but electric grills (Nope!) or a smoker (Yes!) could actually work for me.

Just wanted to thank you for this rabbit hole! Sorry if I’m dragging this along but I’m actually kind of excited at the concept of being able to smoke again. I was so stuck in my ā€œreal hardwood coalsā€ purist attitude, I’d completely forgotten electric was actually so simple and boring, I got no joy from using it! :rofl: One of my colleagues was a competitive smoker in Texas and he told me electric was prohibited because it was so repeatable!

Spent way too much time on FB marketplace yesterday looking at neglected electric smokers!
