Can I engrave on stainless steel knives? If so what are the settings?

The reason I say so is that there’s no definitive yes/no answer. Dig around for a while (or if you already have) and if you still have questions, ask away. Chances are it’s been answered already.

If you mean remove metal then no. If you mean mark it so you can easily read logos and letters then yes. Like evansd2 said, you need to read a lot. People have been having luck with all sorts of marking material, however, success varies from one piece of metal to the next. The consensus is it’s the metal.
On the other hand Cermark should always work. You can search just for that.
