Honestly in the kitchen I’d go for a waterproofing spray.
Condition the leather with whatever you want to use (anything from coconut oil, beeswax, to a purchased conditioner) and then when it’s all soaked in, wipe it down with a cloth and then use a spray waterproofer.
That’ll eventually wear off, so when/if you see parts drying out/scuffing, re-condition and then re-spray.
I’d go with whatever you can get your hands on easily. Scotch Guard, Resolene, Kiwi - brand doesn’t really matter. I generally use Leather Honey, but that doesn’t come in a spray, instead it’s a repellent mixed in with the conditioner.
