And with another few minutes you can make handles for those by doing a same-width score. (I’ve 3D-printed cookie cutters, and they’re a pain without a stiffening frame of some kind.)

I wonder if the GF could cut the pie dough directly once it was rolled out?

Absolutely. You’ll have to work out the right settings to cut it without leaving disgusting burnt pieces or melting too much butter in the dough.
