Since the proofgrade draftboard is out is/what is a good alternative to use for the alignment procedures - does it matter what material you use or is the draftboard just to say dont waste the good stuff?

Not really just needs to be big enough and flat. I’d go ahead with cheap ply from the big box stores and don’t waste the good stuff.

After it taking many attempts due to wifi issues, I used a sheet of cardboard cut from a shipping box.

And also keep in mind you can cover whatever material you use with a new layer or two of masking and use it again (if you need to)
