My early years looked like this except I made my own. Burgers Smokehouse is the big cured meat company in mid-Missouri. I went to a boarding school for high school and I would bring snacks for break from home rather than spending money on candy and soda from the school store. My favorite was the winter snack of Burgers summer sausage, Ritz crackers, and spreadable cheese. I’d keep it in a window sill for refridge. This was pre-luncheables so I made my own. I’ve graduated to better cheeses and meats, but it’s really the same!
Edit: fixed spelling of capocollo. Missed the double “l”. This particular cut comes from the neck muscle, hence the “top of the neck” translation.
