Countersunk Screws? - YUP!

I would point out that making a clean mechanical countersink on acrylic is hard. You really want to be using a drill press, and you want everything clamped down rigidly. The acrylic chips, grabs, chatters, melts, and generally fights back. Since it is not at all malleable and quite strong in compression you need really sharp tools! It’s worse for big holes but even little ones can be a challenge. If you try it by hand get a countersink stop to give yourself a fighting chance.

Good points @jkopel! It definitely does. I once fabricated and installed a 9 foot tall by 12 foot long 2 inch thick partition at a college. We had to cut it to size and route a channel in the top on the bottom for it to mount to. It fought us every step of the way. We were also fairly nervous because it cost $20,000 a sheet.
