A lot of reasons for this. Lets assume you are ordering Baltic Birch.
Each layer is about 1.5 mm thick so to build it up to the correct thickness, they might have to turn the outside layer 90deg to get the front and back grains to be parallel.
Also, there is a BIG difference between Birch and Baltic Birch.
