Someone asks me if I can do an outboss plaque? I have never heard of this. I did some research last night and it looks like I would make some kind of stamp for them to use to stamp on fondant on top of a cookie. Have you ever heard of this? How would I go about doing this? I usually only deal with acrylic.

Actually the description sounds like a cookie cutter with an extended flare so the “outboss” (opposite of an emboss?) stays raised while the border flare presses the fondant down.
I was told that this is done with 1/8 acrylic. If anyone knows the settings to engrave the outside and leave the letters up, please let me know. Thanks!
The issue is the area engraved If you remove the outside line (or Boolean a new one) what is up and what is down reverses. If a raster just invert the gadient. (make a photo negative)
