Can't select options from drop down menus in iOS

I know mobile development is a bit behind development for computers, but it seems to me I used to be able to do this. I’m talking about selecting different LPI settings or different greyscale settings than the defaults, when using an iPad. I’ve tried it on iPad Pro 9.7" running iOS version 10.3.1 and the current versions of Safari and Chrome. The drop down menu will drop down if I long-press the link, but I can’t select a different option.
