How to add text

I have yet to take the time to figure out how to add text to various templates that I’ve found, either in the GF catalog or elsewhere. I’ve made alot of really cool things, but not adding my own text. Can someone guide me in the right direction how to do that? I have Corel but I’ve never used it. Any help would be appreciated.
