Engraving Larger Depths (Removing crumb tray)

Hello, I am an artist that laser engraves on small panels. To my understanding, the Glowforge depth options are always considering the depth of the crumb tray itself. I always need to take my tray out to engrave on thicker panels. I am curious if there is a better way to set the depth of what you are engraving without having to subtract the depth of the usual crumb tray… Id like to just tell the machine exactly what depth my object is without having to do the math and trick the machine into…

TLDR: Remove the crumb tray and then find a way to make the surface of whatever your material is fall in the focal area of the laser without the air assist fan shroud whacking it or the head camera crabbing that this material is too tall to ride the ride.
